So, I started a new traditional at home. ( I am known for doing this) Wednesday nights are my healthy cooking nights. Since Wednesday I get home from school and work at a normal time, I have time to cook a good and planned meal. So, I hope you look forward to seeing more
Healthy Humpday Dinners!
Last night I made a quick and easy Stuffed Spinach Shells.
Here’s what you will need: (feeds 2-4 people depending how much they eat 🙂
1 egg
1 cup of fresh spinach – I drain mine, you don’t have to but the texture is easier to eat.
1 cup of Ricotta cheese reduced fat
1 cup of mozzarella cheese
1 box of jumbo shells
& your choice of sauce, I used Vodka sauce *Superyummy*
Here are the steps: Enjoy
Start by boiling your water and putting your shell in to cook
Meanwhile, while the shells are cook, start your filling!
Mix this all ingredients together to create a paste!
This is what your filling should look like.
Let’s check on those shells, if they are boiling for too long, they will get too soft and start falling apart.
Perfect!!
Time to drain and fill!
I use a spoon and just put the filling right in.
Stuff them and place them in a dish, we will be putting them into the oven to cook the egg in the mix
and to get a nice toasted top!
< That is the Vodka Sauce I used! *AMAZING*
Pour the sauce over the shells and put some cheese if you like it CHESSY>
I bake it for about 10 minutes @ 350.
And when it’s done…. SERVE AND ENJOY!!
