Hello!!

So, I started a new traditional at home. ( I am known for doing this) Wednesday nights are my healthy cooking nights. Since Wednesday I get home from school and work at a normal time, I have time to cook a good and planned meal. So, I hope you look forward to seeing more

Healthy Humpday Dinners! 

Spinach

Last night I made a quick and easy Stuffed Spinach Shells.

Here’s what you will need: (feeds 2-4 people depending how much they eat 🙂

1 egg

1 cup of fresh spinach – I drain mine, you don’t have to but the texture is easier to eat.

1 cup of Ricotta cheese reduced fat

1 cup of mozzarella cheese

1 box of jumbo shells

& your choice of sauce, I used Vodka sauce *Superyummy*

Here are the steps: Enjoy

Start by boiling your water and putting your shell in to cook

Meanwhile, while the shells are cook, start your filling!

1 cup Ricotta Cheese

Mix this all ingredients together to create a paste!

This is what your filling should look like.

Let’s check on those shells, if they are boiling for too long, they will get too soft and start falling apart.

Perfect!!

Time to drain and fill!

I use a spoon and just put the filling right in.

photo 2 Stuff them and place them in a dish, we will be putting them into the oven to cook the egg in the mix

and to get a nice toasted top!

< That is the Vodka Sauce I used! *AMAZING*

Pour the sauce over the shells and put some cheese if you like it CHESSY>

I bake it for about 10 minutes @ 350.

And when it’s done…. SERVE AND ENJOY!!

Dinner- Zucchini Tacos!

Not the prettiest picture, but it sure taste amazing!

Looking for a healthy dinner!! Look no more!

Zucchini is one of my favorite veggies! These here are my zucchini tacos.

You can treat them like regular tacos, add anything you would normally add to your tacos!

Here are the step by step process.

Gather you medium size zucchini, make sure to wash them thoroughly. Then, cut them long length in half.

After cutting them in half, you can use a small spoon to scoop out the inside of the zucchini, making a boat effect. Make sure not to scoop all the way to the end, you what there to be a border so the fillings doesn’t  fall out. (Don’t mind the sliced zucchini, those are for tomorrow’s steak dinner)

Now, that they are all cut and cleaned, you can use a cooking brush to apply a little

oil to the inside of the zucchini, this will help the zucchini cook nicely in the oven.

This step is by all means optional, also spraying a little PAM works just as well.

I cook them for about 10 minutes at about 350, meanwhile I am cooking the ground beef. You can use chicken, turkey ground beef or fajita meat.

Which ever you chose will taste amazing!

Then, you fill them with all the goodies. You add your meat, cheese, lettuce, tomatoes, sour cream or plain Greek yogurt and any other yummy condiments.

I eat about two boats, that’s enough to get me filled, which is only 1 zucchini! Amazing huh!

Cinnamon Bun Break!!

Hello Everyone!

I am so sorry that I was not able to post this yesterday, I was at my mother’s house and she has no

INTERNET! Amazing huh?

So, I didn’t bake these amazing Cinnamon buns, but they are definitely worth posting.

Knaus Berry Farm is located in the Redlands of Florida and has been open for 50 years!

It is a very small shack where the Knaus family sells naturally grown produce such as lettuce, corn, zucchini, and tomatoes. The family is pretty famous in the Miami and Homestead area because of their amazing baked goods. Just from the Cinnamon buns, dinner rolls and pies the Knaus Berry Farm maintains lines of customers that can easily go around the curb!! It truly is amazing.

I went for the first time yesterday, with my mother, sister and boyfriend and we were not disappointed. I have not made cinnamon buns from scratch but this really did motivate me to find out how. I will hopefully make them this weekend and post the recipe and how to’s! I am very excited.

For now, I hope if you are ever in Miami during Nov-April that you come out to Knaus Berry and try their cinnamon buns!! You wont regret it!
